Sweet Potato Gnocchi in a Tomato Sauce

- PREP TIME: 40 minutes
- COOK TIME: 20 minutes
Boil the sweet potato for 15 minutes or until soft.
Drain the excess water and mash the sweet potato until smooth.
Add the Fate All-Purpose Low Protein Mix and the egg replacer to a bowl and knead until a dough forms.
On a clean dusted surface, roll the dough into a sausage shape, 2cm thick.
Cut the dough into 3cm chunks and roll each chunk lightly in Fate All-Purpose Low Protein Mix.
Using a slotted spoon, place dough balls into a pan of boiling water, over a medium heat, cook for 5 minutes and remove and place on a paper towel.
Place the oil, onion, garlic, basil and tomatoes in a pan over a medium heat and fry for 5 minutes or until the vegetables are soft.
Toss the gnocci in the sauce and serve.
Serving Suggestion
Serve with grated Violife original flavour on top.

Add some chili into the sauce for a spicy kick!

- 150g Sweet potato, peeled and cut into large cubes

- ½ Red onion, finely diced
- 1 Garlic clove, minced
- 10g Fresh Basil, finely chopped
- 150g Tinned chopped tomatoes
